AFAIK, Polish Books is not customizable. The ModifyEpub plugin does use the preserveAspectRatio="xMidYMid meet" setting which is why I prefer it. Most of the items that Polish Books does that Modify ePub doesn't such as font subsetting/embedding, removing unused CSS rules, etc. are not needed by me since I run the epubs through an editor (either Sigil or calibre's editor or both depending on what I'm doing).
