But your last sentence seems to answer the question: one can toggle between the various progress modes by long pressing the page numbers while reading. Maybe they took it out of the settings and made this behaviour the default.
The toggling by long press has been there for a long time. At least since they added the chapter/full book option. And it doesn't change between the chapter and full book display, just page number, percent and time to read (for kepubs).

The options are still there on my Aura ONE. I'll have to check my Aura H2O tonight, but I'm pretty sure they are there. Options changes are one of the things I look for when I get a new firmware version.
