You should try Export Notes and see if it works for you. It does not export Bookmarks (use a highlight or note), and it is not available for 'Docs' (on Kindle - but is iOS/Android/Fire it works with Docs as well), but it is convenient.
I understand there are workflows people have around My Clippings (like yours), but it's always been too limited for me to use (I don't do all of my reading on a Kindle).
To the extent that I 'track reading' I use Goodreads. Again I don't do all my reading with Amazon's ecosystem, much less a single Kindle.
