Well, some of us are ADHD and don't realize what we are doing because that is simply how our body/mind works. I normally have some body part in motion and my leg wiggling can be problematic. I enjoy bouncing a ball between my hands but I only do that when I am alone in my office. The people who share an office with me know that they can say "You are shaking the desk" or "Stop with the ball" or whatever else it is that I am doing and I will stop. I also cannot control the loudness of my sneeze and I am a loud sneezer.

I walk quickly and push through things fast so I slam doors more then I should. I try and remember not to but when I am day dreaming or lost in thought I forget. I day dream and get lost in a thought a fair amount.

I am not trying to drive you crazy, I just don't want to take a medication that has the effect of turning me into a freaking zombie so that you don't have to occasionally ask me to stop wiggling the desk or playing with my ball. Try approaching the noisy person and asking them politely to try and be less noisy, it can be very effective when done politely and without a laundry list of complaints.

And no, it is not an excuse. The third Doctor who diagnosed me flat out told me at our first appointment that she believes ADHD is massively over diagnosed and that I am probably not ADHD. After two hours of diagnostic testing and conversation she diagnosed me with ADHD. She actually told me that she made the diagnose in the first 10 minutes after meeting me but needed to complete to appropriate procedure because that is what you do. We worked on behavior modification and my responses to people in a variety of situations. It helped a ton.

So be polite but say something. It might be that the person does not realize that they are loud. It might be that there is an explanation. It might be that the person is a boor and nothing will change. You won't know until you try.
