Meats that are prepared by Halal and Kosher laws must be consumed soon after slaughter. The sooner the better. Obviously, the longer meat and poultry is aged, the more
tender it will become, as the muscle fibers actually break down. But rigor mortise is nothing more than muscle
contraction rather than actual
hardening of the fibers. The meat feels more firm
as a whole, but isn't more tough to chew.
In the jungle, people want to eat meat before the flys get to it. Unless there is a cold-store locker, hanging meat isn't an option.
