My fingers are extremely sensitive and I use my Nook Tablet a lot. In fact, I need to cut down and start using my laptop and speech recognition program as soon as possible... Maybe you could invest in a speech recognition program? The one I use is Nuance Dragon. It's a bit expensive, but worth the price if you're in a lot of pain.
Also, I find when I use my other tablet with a matte screen protector my hands/fingers don't hurt as much. The surface is much more smooth. As soon as I buy more Dust Off (an electronics compressed-gas duster), I'm going to put a screen protector on the tablet I use most. Hopefully in a few days. You could find matte screen protectors on eBay or Amazon. Two or more packs would be best, in case you have trouble applying the first few.
'Hope you start feeling better soon.
