Marzipan... I don't think I've had such a good laugh in months. Is that the fabled new "predicting keyboard" in iOS 8? On-topic: I find that the disappearing highlights mainly occur if they are highlights across paragraph boundaries. This is a long-standing Marvin/WebKit issue. For this reason, I try to avoid highlights crossing paragraph boundaries. I may, instead, highlight two successive paragraphs as two separate highlights. That's a lame workaround, but at least such highlights tend not to disappear.
