Blu - 2 things. First, the change that Blossom was telling you about can be set as a default, rather than book by book. Go into Preferences, then the section under Conversion that says Common Options. Make your changes in Look and Feel there and that will be the default for all conversions.
Having said that, I don't have any of the things Blossom said to check actually checked, so I'm not sure that's what's affecting your font issue. However, if you've done those things and it's worked, then just ignore me
Edit: Double check you don't have an embedded font checked in the Common Options area I mentioned above... click on the button that says Choose Font Family and make sure you have None chosen. Don't really know if that could affect anything, but it's worth double checking.
