Or you could try looking into a couple of the Triton Color eink products around. They all have flaws but if they meet your specific needs...

But first you might want to look into add-on antiglare films for her iPad.
They are a bear to put on right (and reduce sharpness very slightly) but they are way cheaper than a new device and they seem to help outdoors usability.
