Just do a factory reset. Gear/Settings/Device/Factory Reset. This will remove all personal info and put it back to the way it was when it was out of the box.
It wont erase anything from the cloud. I too hate there is no collections on the Fire but I've gotten used to it.
This needs to be moved to the Kindle Fire forum.
