Thinking of replacing Fire because of book collections

I hate hate that the Fire does not have book category/collection functions. DH bought me the Fire because I did not like using the Ipad for long term reading. If I returne the Fire, which Kindle should I get? All I really want to do is read on it, it must be easy to download library books and it must have the ability to create mutiple categories and sort/display by category.

Also, to return my Fire, all I need to do is deregister it and delete the few apps I added, correct? Deregistering will keep my books in the cloud but off the device, right? And Facebook, just sign out? The app came with the Fire so not sure it can be deleted. I did not set up my email accounts on the Fire.
Anything else I should do?
