Building the computer itself is easy (and quite inexpensive). Heck, even a run of the mill small form factor HP or Dell will work. It's all that work on the frame and wall mounting (embedding really) for the touchscreen that's going to be difficult.

The new VAIO all-in-one's are actually quite ugly compared to the older models. My boss had this one and it was really, really pretty:
I regret not buying one. It was going for less than $1,000 on Amazon before it was discontinued.
Wall mounting the iPad is probably easier as I'm sure there are probably already accessories for that.
