If I understand things correctly, you will only have *one* account library for your regular Amazon purchases, Unbox videos and Kindle Books. Since both Kindles will be on your account, your son's Kindle books will show up in your media library (see image below).
You and your son would make 1-Click purchases on the new separate debit/credit card that you control. Any other purchases you make through Amazon would use the shopping cart, so that you could use a different card. That is the only way I think of that will allow your son to be able to use all of the features of the Kindle with you still having control on how much is spent.
If Unbox requires 1-Click (I'm unfamiliar with the service) and it's a more important service to you, then the only other thing I can think of is to keep your son's Kindle de-registered. You would have to download the books for him (maybe onto and SD card).
I hope Amazon comes up with a better solution because I think it would be helpful in a lot of situations and would increase Kindle sales.
