Editing a book

A scenario:

I have a book supplied to me in a Gutenberg-like .txt format.

I convert it to epub and read it. I notice several errors, both typos and what I assume are format conversion errors, but some of those could be typos too.

Which copy do I fix the errors in?

The .txt was the master.

But I need to fix the format errors in the epub. I don't really want an out of date format left around. But I don't really want to fix both.

What's the right way to deal with this?
