You shouldn't feel sorry for her - she is very foolish. She is self-evidently guilty, has gone to court three times, and each time the fine has been increased. Juries don't like people who try to make fools of them, which is exactly what she's tried to do. The plaintiff doesn't want the money, has offered to settle with her repeatedly, and she's refused. All she's doing is wasting public money and everybody's time.
