I'm not sure how you get your milk... homogenized or not. but if you can get fresh milk from a farm, the cream is the heavy stuff at the top of the container. you skim that off (which is why skim milk is called that) and you are left with heavy cream. it can then have sweetened things added to it (I LOVE to put in a bit of almond flavor for coffee or whipped cream), or to make sour cream, if you cannot find buttermilk, add 1 tablespoon vinegar to 2 cups of the cream, mix well, cover and let sit out over night. this will give you sour cream!
