I was comparing this to an Excel-like 'Paste Values' or a Word-like 'Paste Text' option

I searched the key mapping to see if there was an option so that I could assign Ctrl+Shift+v to paste everything everything except <.*>, </.*>, and {.*} (maybe, my RegEx is maybe a C+)

The easiest way to use PureText is to simply use its hot-key to paste text instead of using the standard CTRL+V hot-key that is built into most Windows applications. To configure PureText, right-click on its tray icon and choose "Options" from the pop-up menu. The default hot-key is WINDOWS+V, but this can be changed. In this Options window, you can also configure PureText to run each time you log into Windows.

thanks for the link, but I believe that it will treat the tags as simple text when it pastes them in, and them Sigil / ADE etc. will 'process' them into headings, etc.

I'll have to try it when I get home

In that case there is also http://www.clipboardfusion.com/ which explicitly has the option to remove all HTML from the clipboard.
