Huevos Rancheros -- one of my favourite breakfasts.

Chorizo is "done" (chilis and spices toasted and ground, meat cut in cubes, all mixed up with salt and a bit of cure and in a 4L container in the back refrigerator.) Now, toss and mix daily for 3 days, then grind, stuff into 32-35mm casings, and hang for a day. Use for up to a week, or freeze for up to 6 months. Not that there's ever any left in 6 months.

Italian will get "done" this afternoon. It will rest overnight and then get ground and stuffed tomorrow.

Good morning, everyone! Happy Sunday! Looks like a fine morning. Gonna go for a bamboo raft ride in the jungle today with some friends, and have a picnic along the way. Gotta remember the mosquito repellent... I'm drinking some very nice tea that I had forgotten about, having it stuck in the back of the shelf; Ahmad's "English Breakfast" tea! I shouldn't forget this one. It's quite tasty! I think I'll put some in a thermos over ice to bring along!

When we last lived here there were two different sausage companies, one British and one German, and both made incredibly good sausage. It was one of the things I was looking forward to when we moved back. Unfortunately, both sausage makers passed away, and now the 'best' sausage maker seems to insist on grinding all his meat into paste! I tried his Cumberland sausage two weeks ago, and it had almost no flavor and the texture of bologna. Two days ago I had a craving for an Italian sausage parmigiana sandwich, so bought a package of his to try... The taste was 'almost' there, but again the texture was more like a frankfurter than an Italian sausage. Both of these should be almost 'chunky' inside the casings! Living in Japan I always made my own sausage as there simply wasn't any European sausages to purchase. I guess I'm going to have to go back to making my own once again.

Sounds like you're going to have to go back in the sausage making business. Which is OK, it is fun and not particularly difficult. If you have a KitchenAid mixer, there's an add-on attachment for grinding and stuffing that is fine for the occasional sausage maker. I used it for a couple of years before finally getting a vertical 5Lb stuffer. And then, another couple of years before I broke down and bought a standalone electric grinder. And I make a LOT of sausage. (Probably close to 100Lbs a year.)

If you ever need recipes, just ping me. I have some good ones, and a few that are better than just good.

This morning, I'm drinking fresh squeezed orange juice and a LOT of water. We had friends over for dinner and we all drank way too much good white wine. (Fortunately, they can walk home!)

Good morning, everyone! We went to a 'Ladyboy' Beauty contest (two of my friends are in long-term serious relationships with 'Kathoeys' (the Thai name for them) and you really wouldn't believe your eyes. Absolutely gorgeous! Almost makes me wish I was Bi. I'd have a 50% better chance for a Friday night date!

Rainy day today, so it will be a wet walk! I'm fortifying myself with a couple of mugs of Lapsang Souchong tea before I set out. I've a good Lee Child audio book to listen to as I walk, and a big golf umbrella. Should be a nice and cool way to exercise!

Well, I had the interview. But now I have to "meet the team". The actual job offer hasn't officially been made, and until I get that, I don't count it! Though I am pretty confident.
