Is there a dublin core attribute for this?

I don't remember seeing it. You could always add a custom <meta> element, or another <title> (there can be as many as you want) with an xml:lang="de" attribute. In any case, I don't think the information will be used by any existing software.

I think the only thing you have is the source entry. There can be some meta data there perhaps. I really think dc needs a lot of work to be truly targeted at eBooks. It has made itself so generic it is often useless.
