Conversion font
I recall setting the default font to be used when converting my pdfs to Epub but can't find this option anywhere now. Anyone know where it is?

I think you'll find the places to do that under the [Look and Feel] tab of the conversion options - sizes at the top, and the "Extra CSS" form, for changing face, below.
