Having lived in San Antonio, I can say without preamble, that there is, too, South Texan:
Tire the Mericas: Tower of the Americas There is an entire "South Texas Dictionary." My favorite is: The longest word in a South Texan's vocabulary: Shiiiiiiiiiiiiiiiiiiiiit! |

Don't forget east texan. The closer you get to the Louisiana/Arkansas border, the weirder the accents.

Planning a month or so is a bit much, unless you're planning an out of state trip. I think local (austin, SA, Dallas) trip could be thrown together in a month/6 weeks to meet at a local bar or something.
