If you click Show Original in Gmail web interface (top right corner of email, "more" menu) you will get the raw text of the message. The header should show something like this:

But that really deals with proving to yourself.

It would be helpful if the message was signed, as in: http://en.wikipedia.org/wiki/DomainKeys_Identified_Mail

Or turn over your email account to the court, so they can check the Received: header trail themselves. I would think the email's existence in Gmail is enough proof that you haven't forged the whole thing in your text editor, as how else would it get on their server?
