Actually you can, if you fiddle around with the files on your PC.
You do not have to fiddle. You just make a copy of the app file and if you want to use it, delete the current one from iTunes and your device, put the old one back into iTunes and use iTunes to sync it. It will be the old version.

They'll remove their in-app link to their web book store.

Or -- they'll build a very nice in app purchasing ability -- ala iBookstore -- and then mark everything up 30%.
