I found that Marvin do not render &#151; in epub document? Does anyone have this problem?

Is it because the document is rendered in UTF-8?

Yep. The internal xhtml documents must be in UTF8.

If the document is UTF8, then what HTML symbol should be its replacement?

For an emdash, use &emdash;
