Conversion to DOCX without metadata
Is it possible to convert an eBook (ePUB, MOBI, etc.) to DOCX and not have the metadata copied to the DOCX? No title, subject, tags, catagories, or comments?

Delete the metadata in calibre first, then convert.

IMO, assuming you are using Windows/NTFS, it's easier to remove Properties after convert with File Explorer:
