Question How can I customise the metadata fields the OPDS server publishes for a book?
In my calibre library I have custom columns like the Filepath on Import which are not useful for a user of the OPDS feed/interface.

How can I customise the metadata fields the OPDS server publishes for a book?

No, I'm afraid there is no customization of metadata fields exposed via OPDS possible.
