Removing the first line
Hi,
I have a PDF version of a book i'm tidying up but have a problem.

The first line of each page is alternatley:-

Chapter name then Page Number / Page Number then Book Name.

Can I delete Line 1 of each page when converting from PDF to Mobi?

Not directly, you have to convert the pdf to html first and then edit the html
