What is the advantage of having access to all the Andriod apps? Would it improve the note taking experience

That's not the Fujitsu website...

But the advantage of Google Play would be to use other apps, e.g. Libby, Scribd, Google Play Books etc. I doubt it would do anything for note taking. How eInk screens do a partial refresh for styluses doesn't mesh well with apps that haven't been designed for it. So while the built in apps work well using something like OneNote won't because the screen won't refresh fast enough to write well.
