I use a supermarket own brand oil that's just labeled as Vegetable Oil. Fairly cheap stuff.

As I said, the recipe is one that was in a book I own and I've always found that it works. I'm sure a few tweaks could improve it - I might well try the brown mustard suggestion next time I make it.

Bachelor Chow recipe from my younger days:

1 box mac-n-cheese
1 can chili with beans
1 bag nacho cheese corn chips

1. Prepare the mac-n-cheese following the directions on the box.
2. Stir the contents of the can of chili into the pan with the prepared mac-n-cheese.
3. Pour the mac-n-cheese-n-chili mixture into a large casserole dish.
4. Crush the corn chips into pieces as small as you like and shake these over the top of the mixture in the casserole dish.
5. Bake in a preheated 350F oven for about 20 minutes.
Note: leftover mac-n-cheese can (and should) be substituted for a freshly prepared box when possible.

Something you may wish to try at home, especially if you have younger kids...

The night before, take a fairly ripe banana, one with a lot of little black spots on the skin, but not one that's over-ripe. Using a sewing needle, poke a hole through the black dot and wiggle the needle back and forth, SLICING the banana. Do this at regular intervals down the banana. THEN, come morning, sit down with the family for breakfast, place your bowl of cereal in front of you, ask for attention, say the magic words, then slowly peel your banana allowing the slices to fall out into your bowl... Watch the kid's faces as the banana 'slices itself.'

A base for many different meals, and very healthy too.
This can be converted into Mexican, Italian, Cajun, or almost any other ethnicity.

1 can Kidney beans (or Black beans)
1 can Garbonzo beans
1 can diced tomatoes
1 large onion
1 package of sausage (the type to vary with ethnicity of the dish)

Cut up the sausage into bite-sized pieces and cook to brown and draw out most of the fat. Discard the fat and put sausage into a bowl.

Roughly cut up the onion and 'sweat' it in the same pan used for cooking the sausages, until softened. When ready (shouldn't take more than 5-8 minutes) put back the sausage, and add the cans of beans and tomato.

Now is the time to add in the 'ethnicity.' Stir in a packet of Chile mix and some Jalapeno Tabasco sauce for a Mexican meal. Or stir in some Oregano, Thyme, Rosemary, garlic, and parsley, etc., for an Italian meal. For any ethnicity, there are a set of specific herbs and spices that you can find just looking at a couple of recipes on the Net. Add those in for the flavoring of your choice. Let simmer, stirring a few times, for about 15 minutes to let the flavors blend. Because none of the ingredients are strongly flavored, the dish takes on the flavor of the seasonings very well.

25-30 minutes start to finish. Almost no fat, high fiber, high protein, low cholesterol, etc., and tastes good. Works well re-heated after being frozen too. This recipe makes about 3-4 servings, but you can double it with no difficulty. Just be sure to increase the seasonings as well, but not doubled...

Save the peel as it's said to be good for shining shoes. (Saw that in one of those 'household tips' books).
