Why does it have to be LineageOS? All you need is a device that works on the android system, on which you can install some alternative "E-INK Launcher" (which are optimized for devices with an E-INK screen) if you just want to be able to install your APK applications.

Since book readers have a refresh rate of about 15Mhz (15 fps/s), the LineageOS interface would be very slow and generally inconvenient to use.

Because of Android can't be easily updated by users and manufacturers using old android versions that loose security support almost when they are released.

I've never had updates for my VHS or my 2003 DVD player and they still work. My Android 4.1 Sony Ericsson phone finally lost Playstore access this year. It still works as a 32G media player and to test epubs on a 4.3″ screen.

Don't use the WiFi if worried about security.

They are still developing some of the functionality, but it seems to work quite well already.

Not as a vendor supported option. Some tablet devices might be supported by Lineage but you'd have to check that site to see what has been ported. As a note, though, the Nook Tablet/Color/HD devices probably have ports.

Also LineageOS isn't a complete OS. It's an adaptation of Android and thus has many of the same problems and depends on Android updates. It's almost pointless.

Not a fan of Android. A lot from 4.x to 13 seems to be Google fiddling with often little benefit to the user. LineageOS isn't an OS in the sense of iOS, MacOS, Linux, RiscOS, Android, Windows or OS/2. It's just a custom Android.
Eink devices already have custom versions of Android, otherwise they'd be worse to use and rarely have bloatware and no Carrier imposed apps.

Mostly it was to get updates for devices that Google and other hardware vendors chose not to continue supporting. Insert rant about Google killing their "flagship" reference Nexus One in six months (launch: 5 Jan, 2010; discontinued: 18 July, 2010). And then doing it again with the Nexus S, and again, and again....

Installing so-called custom firmware was a lot easier in 2012-2015 than it is now.

Yeah, nothing showing up on either LineageOS or the old CyanogenMod site. In principle, it should be possible to port either of them to the Nook 1st Edition or Simple Touch, but it looks like nobody submitted patches to do so.

The nook STR (IMHO) is too weak to put on another OS.
