At every start of the viewer, folders are created in appdata
Code:
%localappdata%\cache
%localappdata%\calibre-ebook.com
Is there any environment variables to relocate this folders?

The viewer uses the same cache directory as the rest of calibre.

Sorry, but this is not true. I am using this parameters:
Code:
CALIBRE_CACHE_DIRECTORY     Z:\Temp
CALIBRE_CONFIG_DIRECTORY    E:\Books\Calibre Library\_userdata
CALIBRE_TEMP_DIR            Z:\Temp
The calibre main program respects that. But the viewer creates this folders:

C:\Users\Username\AppData\Local\cache
C:\Users\Username\AppData\Local\calibre-ebook.com
Calibre 5.11 x64, Win 10 20H2

No, thats not the viewer that's Qt WebEngine which the viewer uses, you're just going to ahve to live with that. I probably could figure out how to redirects itscaches, but not worth the effort for me.

This is sad. So I will continue to use the external viewer instead of the native one.
