Mangetout (French for "eat all") is a type of pea that you eat in the pod; pod, peas and all. Samphire is a green plant that grows in coastal areas and has a distinctive salty taste. It's more commonly eaten with fish dishes. Both are simply steamed and the samphire is served with melted butter.
