There have been devices with Gallery screens but none of them seemed to lasted very long likely due to Gallery 3's slow response. Currently the reMarkable Paper Pro (11.8" 3x4) and the reMarkable Paper Pro Move (7.3" 9x16) are the only two I've seen any availability on. The reMarkable use the newest Gallery 3 for improved response times. The B&W response time has improved to 350ms from 2 seconds for monochrome and 1.5 seconds (1500ms) from 10 seconds for the best colour mode. reMarkable uses a modified Gallery 3 screen (Canvas Color) with ~20K colours compared to Gallery 3's 65K colours though I've never seen if this is simply that reMarkable's colour mode is either eInk's fast or standard color modes with the best colour mode not available.

One friend of mine does have an 11.3(?) Gallery 3 display which he uses with a Raspberry Pi 5 which was surplus from a project at his work. It is noticeably slow but he mostly uses it for weather and other slow changing items.
