Not bad, GtrsRGr8. It's worth pointing out that some deep South and "soul food" dishes also incorporate aspects of southern Native American cuisine.

It didn't occur to me that they were "out of the ordinary" since my local grocery stores carry them when in season.

I personally don't like them as I dislike mushy leaves. (Texture issue - I also don't like cooked spinach - I don't mind the flavor, but I can't stand to actually eat them.)

How about "a little bit out of the ordinary"?

This piqued my interest. And after investigation it looks like cookbooks about, or with recipes on, preparing "collards" are not all that uncommon, based on the results of a search on Amazon. The search returned 321 hits. I think you should be fine growing Collard Greens unless the salt proves to be detrimental. I live in an area that is not close to a beach, but is very sandy and Collard Greens grow all over the area. Think South and Georgia together.

Some must be growing it down here in NZ as the seed merchant I have ordered from had 3 varieties listed, but I have never seen seed in retail outlets; of course, seeking authenticity , I went for the variety called Georgia Southern .

I didn't recognize the name of the author, Cree LeFavour, because I don't cook or keep up with those kinds of things. I went to her page on Amazon's site, however, and noticed that all of her books distributed by Amazon are very highly rated. This book is #18 of all of the seafood cookbooks sold by Amazon, which seems pretty impressive.

The book is very attractive inside and out. The color photographs are beautiful; the cookbook has the unusual distinction of having used a separate, apparently professional photographer, Antonis Achilleos.

I keep seeing comments in the reviews of books "by" Encore that they are just ripping off recipes from other sites and publishing the at Amazon - that's pretty much a big copyright violation (the ingredients list of a recipe can't be copyrighted, but the actual instructions and comments, along with any photos, are).

Of course, the comments could be wrong, but I doubt it. I, for one, will refrain from posting Encore books until I am convinced that they are not guilty or, if they are, have mended their ways (and books published before their ways-mending will be off limits for posting by me).

One question arose in my mind, however. That is, how it could be possible for all (or most) of the different authors of all of the different cookbooks to be guilty of taking recipes from other sites. Then I looked over the list of Encore Books that Amazon sells and noticed that all of their cookbooks are written by really only a handful of authors. If there were a large number of different authors, it would be much more difficult to believe that all of them had taken recipes from other sites and put them into their cookbooks. With a handful, though, it is much more plausible. It's interesting, too, that almost all of the cookbooks have "Encore Books" as one of the authors. Could it be that all or most of the individual-people authors are innocent and that it is the co-author (Encore Books) that is the culprit?

I suspect that there is one "author" and that's the one putting the books into the store. The rest of the author names simply being made up.

Thanks for the post. I always appreciate the insight that you have, as seen in the posts that you make.

BTW--I saw a cookbook yesterday that looked good, had good ratings, etc. But then I checked to make sure that it was self-published (to those other than Koland: it's against the MR rules to post them). Encore was the publisher, so I didn't post it. If Encore is really misbehaving, enough people will "get wise to" them and it will ruin them.
