Hola, amigos! We're going Mexican tonight. Fajitas for dinner! Easy and fast to prepare, and really tasty.

Mexican Fajitas (fa-hii-ta)

300-400g beef and/or chicken
1 large onion
2-3 green peppers
Taco sauce
Sour cream

Marinade:
150cc corn oil
40cc lemon juice
2-3 cloves garlic (crushed and chopped small!)
2 Tbs cumin
1 Tbs oregano
1 Tbs parsley
1 tsp fresh ground black pepper (or 1/2 tsp bottled black pepper)
1 tsp salt

Preparation:
1. Mix together marinade
2. Cut meat or chicken in to thin strips and put into marinade
for a few hours
3. Slice onion and green peppers into thin strips

Cooking:
1. Fry onions quickly in a little of the marinade oil until a
little burned
2. Add green peppers and continue cooking for another 4-5 minutes
3. Take onions and peppers out of the pan and put aside.
4. Drain extra liquid from meat or chicken.
5. Quickly fry meat or chicken on HOT fire. When cooked, add
back the onions and peppers and cook for another minute.

We like these served on soft flour tortillas covered with spicy taco sauce and sour cream. I also add in some sliced jalapeno peppers for some extra kick!

I can get them, (both corn and flour, large and small,) but not in the neighborhood supermarkets. I have to go into downtown Kyoto or Osaka, to an import food shop. Going into Kyoto makes for a nice bike ride. 35-40 minutes. But there is no cheap parking near the Osaka shops so I have to take the bus and train. Hour and a half all together, which is a normal daily commute in Japan. I usually pick up several different odds and ends to keep in the freezer so I'll have it when the moods strike.

Today I put in an on-line order for meats... stuff I can't even get in the import shops. Smoked German bacon, both block and sliced, (Japanese bacon isn't smoked,) Cajun Andouille sausage (I'm too lazy to make them this time and starting to crave Jambalaya, ) a couple of pork shoulder roasts, and a leg of lamb.

good thing you're retired! it seems to be an almost full time occupation not only seeking out the answers to your cravings, but creating them when they are not available!

While I prefer to think of them as 'quests,' you're right. I do actively think up new things and how best to find/make them. Man is a problem solving creature, and if I don't have something to stimulate my mind I go a little nuts. It's why I'm really only 'semi-retired.' I still write and shoot for travel, tourism, and nature magazines just to keep me occupied.

While I enjoy reading several hours a day too, I still need to feel as if I'm solving some sort of problem. And when that problem tastes good, it's even better!

I'm very excited - next week I will be making my own french bread I found a recipe in Homemade (a Reader's Digest book) and it looks pretty easy.

It's a pretty cool book by the way, it has "recipes" for tons of things: cleaning supplies, pantry basics, home remedies, pet stuff, lotions, etc.

Are you going to try to make it have the very extra crusty exterior that fresh French breads are famous for? Does your cookbook have instructions for that? It's not difficult, but it does take some extra steps.

It doesn't say anything about that, what do you have to do?

Towards the end of the baking cycle, spray the loaves with a mist of water, let evaporate in the hot oven with the door closed, then spray again. Do this several times. In France, with stone overns, they will spray water onto the stones to create a quick steam bath, and do that several times. I've seen recipes that suggest tossing a cup of water onto the walls of your oven, but' I'd be afraid of warping the metal.

I've tried the spray/misting method and that works pretty well.

That doesn't seem too hard. Gotta get a spray bottle though!

Easy peasy! Just don't saturate the loaves... mist them!

These days... mostly in airline seat back magazines. I'm getting too lazy to write much and they want more photos than words anyway.
