they were pretty damn good! they were a pancake with the spinach, and some potato and onion as welll as some spices and herbs. not at all sweet which was my main concern. I definetly think I will be pursuing how to make these on my own!

I made these myself, though they are not as good as what I used to buy in South Carolina. You could by them from a local charity in the Wal-mart parking lot.

Try making some Spanakopita (Spinach Pie).


This is a basic recipe. Add other stuff, like dill, only after you've tried the basic pie

Spinach Pie
This looks harder than it is.

Preparation time: 1 1/2 hours (includes 45 minutes of cooking time)
Serves: 4 to 8
  • 1 Pound Fresh Spinach, cleaned coarsely chopped
  • 1/2 chopped sweet onion
  • 3 to 4 oz. Feta Cheese. From finely crumbled to some fairly large nuggets. (The more the better.)
  • Raisins. As much as you like. Put at least some in there.
  • (Optional - 1/2 of a large apple cut into small chunks.)
  • 3 Eggs
  • 3 Tbl spoons light olive oil (about 1/3 cup)
  • Thawed Filo Dough (part of one box)
  • Salt, add at least a little, but you can probably do without if you need to.

1) Preheat the oven to 425°.
2) Now clean and prepare the spinach, patting it dry with a paper towel.
3) Mix the uncooked Spinach and the olive oil in a LARGE bowl.
4) Mix in the eggs, onion, raisins, and Feta cheese in that order.

Remove the Filo from the box. Ignore the directions on the box.

Select a 9x12 inch baking pan (lasagna pan) and lightly brush the bottom with olive oil.

The (dreaded) Filo:
CAREFULLY fold the Filo sheet in half. And then half again (it’s just easier to hold it that way without tearing the Filo sheet). Now while holding the sheet vertically cut upward with scissors so that you have only 2 halves of one Filo sheet.

Lay it flat in the baking dish and with a soft pastry brush coat it with butter.

Make 2 or 3 layers.

Ignore any minor tears in the Filo and throw away any uncooperative sheets. You'll have plenty.

Spread half of the spinach mixture on the Filo and top with two sheets of filo (brushed with butter).

Spread the remaining half of the spinach mixture in the pan and top with 4 or 5 more layers of filo, basting each layer with butter.

Brush the top of the pie lightly with olive oil, or 1 large egg white for a golden crust.

Bake for 40 to 45 minutes. It will be lightly browned on top.


Spinach Pie Shopping list:
  • 1 pound spinach. A 10oz. Bag is the minimum.
  • 1 sweet white onion
  • 1 small box of raisins
  • 3 to 4 oz. Feta cheese - DO NOT SUBSTITUTE
  • 1 large apple
  • 3 eggs
  • Light olive oil.
  • Filo Dough
  • 2 to 3 sticks of melted butter



PS - Don't worry too much about the Filo, you can always eat the evidence.

Another PS - I don't care if you don't like Feta cheese, it has to be in there.

And another PS - Don't get cute and cut it into "little triangles", everyone's going to eat a lot of it.

DO use dill! do NOT use raisins or apples! i've been making this dish for over 30 years and eaten it in several countries and never had it that way. I can't think of a better way of putting someone off of Spanikopita forever!

and serve it with tzatziki!

For 30 years you've made it wrong????

OK, I can suggest leaving out the raisins along with the dill when someone tries the basic recipe.

The first time I had Spanakopita was from a guy born in Greece. What part, I don't know. But his, and other places, have had some raisins in it. Regional? Maybe.

The part where I say - "Add other stuff, like dill, only after you've tried the basic pie" is for two reasons. One - some people don't like dill and will never try the recipe with dill in it. The first part "Add other stuff, like ...." is because I've seen Spinach Pie with ingredients ranging from sour cream to nuts.

What is "Authentic Spanakopita"? Search for Spanakopita and you'll get "About 287,000 results". Some with chicken!

Once they try the basic recipe and see how easy it is to make they can search for other spinach pie recipes to find the ingredients that they like.

So lets leave the raisins AND dill out for the first time.
