I didn't express myself clearly. I was wondering why they used homemade wine, instead of store-bought wine. I suppose that it would be because they enjoyed making it (and what else could you do with it after you got through making it but drink it yourself or serve it to others?) or because they thought that it was superior to store-bought wines.

Yeah, the brewing process is very temperamental. Any deviation affects the outcome. The neighbor that I mentioned probably had better success with consistency than the average person making wine. He would have been exact about the amount of this and the amount of that (yeast, grape juice, whatever else goes into it). He used stuff like a hydrometer (for measuring specific gravity), a thermometer, etc. But, like I said, he was a chemist, so these kinds of things were familiar to him anyway, and he enjoyed all of it.

The reason that I have such vivid memories of his operation, even though I was just a child of like 9-12 years of age, is that I loved chemistry at that age (I had an awesome lab down in our basement). So, I thought that what he did was pretty cool.

If you like using a pressure cooker (I'm not a fan, myself), you should really appreciate this 529-page tome.

One reservation that I had about posting this book was the fact that it has only a 4.3-star rating at Amazob, which, with my ultra-high standards seemed a little weak. That is not anywhere close to a slow cooker. You might want to change your first sentence to if you like a pressure cooker.
Slow cooker is hours, pressure cooker is minutes.
