At Chinese restaurants here, the leaves stay in the pot. If you open the lid your server will generally refresh your pot with more hot water without adding more tea leaves. (Or at least that's how it works at the dim sum place I like to go to.)

The Chinese fusion restaurant that my hubby and I like to go to serves cvery nice loose leaf tea in a pot but they have an infuser basket for the leaves. They bring a little hour glass to the table so you know how long to steep it for. I remove the basket and will ask for more water when the pot is done.
I do love that place. The food is good, it is in no way authentic but it is good. They serve tea in a civilized manner. Best of all, we can bring the dogs with us when the weather is nice. |
