@Stitchawl. Either you gulp down 1 liter while it is still warm enough, or you drink some of it cold, or you reheated, or you do not drink it all. Interesting, knowing you, you might do all of these, depending on your fancy or your activities or ... Maybe not the not drinking it all.

I use big mugs as well. I have on that holds 0.5 liters, but the one I most regulary use is 350ml. Very soon I will have this mug

The only constant is that I drink a lot of tea every day. A day without tea is like a day without air to breath. A fairly consistent constant is that I drink black teas. While I drink green tea almost every day at lunch in local restaurants, I immediately rush to somewhere that I can rinse my palate with iced black tea, i.e. Starbucks or McDonalds afterwords, then have more hot tea when I get back home later in the day.

Perhaps the green teas are just to ubiquitous? I don't know. They just don't do anything for me. At least oolongs have a bit of a kick to them, especially my favorite, Ti Kwan Yin, what you might know as Iron Goddess of Mercy. Especially in a really large tankard!

That is exactly the 30 euro/100 gr that I got Thursday by the small lady in the tea shop (she insisted that I get only 50 gr. She obviously wants me to come back with my instinctive prudence on hold, relented by her generosity and wisdom so that she can unload on me her more expensive stuff and I get hooked on it, but I am not a snob. I like them when they know their trade). Autumn. She said that it was better than the spring one. But I am on greens now and I want to stay here at least for a week to let my flavor sensitivity to adjust to the fainter sensations. Than Oolong and blacks again. Or not. Who knows. Not only la donna is mobile ...

By the way. I do not go to oriental restaurants since a long long time, for reasons that will stay under cover, so I do not remember about the tea they serve, in particular if the teapot is with the leaves inside or not. Do you mind telling me?

At Chinese restaurants here, the leaves stay in the pot. If you open the lid your server will generally refresh your pot with more hot water without adding more tea leaves. (Or at least that's how it works at the dim sum place I like to go to.)

Thank you, Betty. So the tea stays with the leaves and keep steeping. I wonder if it becomes more bitter or what.

Dim sum eh? I remember those. Very good they were. Why not? I will look if there is something like that where I work.

Pour the tea into cups. Don't leave any tea in the pot, in fact traditionally the Chinese will have extra cups available so they can pour the tea into them rather than leaving it in the pot to steep further.

The Chinese fusion restaurant that my hubby and I like to go to serves cvery nice loose leaf tea in a pot but they have an infuser basket for the leaves. They bring a little hour glass to the table so you know how long to steep it for. I remove the basket and will ask for more water when the pot is done.

I do love that place. The food is good, it is in no way authentic but it is good. They serve tea in a civilized manner. Best of all, we can bring the dogs with us when the weather is nice.

there. I see the light. To day to have my gunpowder tea with lunch I had to go up and down like a fool. I was brewing a small cup at the time and resteeping.
To night I will use a regular teapot and a paper bag. Tuesday I'll buy a steel infuser.

There is only one dim sum place in Milano. It opened few months ago. It is in that degenerate neighborhood near via Como, that when you were here was not in fashion yet, maybe. Probably excessively expensive ... far from where I work, forget it.
