True. A lot of Americans don't understand that quotes are done differently in different European countries. I work for a printer (doing word processing basically) and we do some French catalogs. Their quotes look like this: << and >>. Each quote is a single character, but you get the idea. And since I work for a printer, the difference between dash, n-dash, and m-dash are all very important to the customer, and thus, to us.

Now when the customer gives us a spreadsheet with these special quotes, and accented characters, my job is to preserve those when we put the data into our super charged word processor.

I learned a lot about printing there. When I first started, the proofreader nearly hung me by my toes when I changed some margins!!

There's a publisher's logo (colophon) in each of my books. It's a gif file. My books are built in Sigil, which I understand produces epub2. It works in all devices and apps that I have tried.

Having barely mastered the basics of HTML, I thought it's taking up too much of my time to learn the conversions, and CSS.
On the up-side, I'm doing codeacademy, HTML+CSS right now.
It might take priority over creating an ebook.
Once equipped with the right tools, I might return and finish the book.
The Bible is a large book, and a lot of work.
Just to copy/paste it, and format it correctly in HTML, cost me 48 hours straight! (that means, not including sleep, food, and living real life outside of coding books).
I'm probably looking at a good 2 weeks of work here, once I have the right tools to work with.

I obviously still need to learn a lot about layouts (and CSS).

I have to say that a Bible is not a good choice to start with when learning to make ePub eBooks and just learning XHTML & CSS. Start with simpler books and work your way up to a Bible.

One way to learn CSS is to look for an ePub that you like and then open it up (it is only a zip file) and look at the CSS inside. You can use it as a model for your own efforts. Many people use the same CSS or nearly the same book after book. Once you have something you like you can reuse it.

I do!

Crikey, I thought that was a principal reason for USING a style sheet....

Most recently I had to add numerous styles to accommodate an included WW2 manual which was "typeset" on a manual typewriter. I am still debating whether to archive this version or to let it run in all future books.

I have to agree here. My first EPUB book I made was just testing all different features like: headings, numbered lists, bulleted lists, underlines, bold, italic, just the basic things. And then validating it online.

I mean you can start with 5 pages of the bible, create your EPUB, and learn what needs to be fixed at that point. Then when you have the details ironed out, continue to make the bible.

Are you sure the Bible isn't available in text format already, or a format that can be converted to text, like html or DOC or DOCX? Or did you want a very specific version of the bible?

Are you aware that there are at least 4 separate editions of the King James translation of the Bible in epub format available at gutenberg.org? They also have 66 separate epub "chapters" available, ranging from Genesis to Revelations, each as a separate download. Then there are alternate translations such as the "Tyndall" bible dating back to the 17th century at gutenberg. If you're interested in comparative religion, gutenberg has the Book of Mormon in epub also. Elsewhere, you can find epubs of the Torah, the Koran and the Book of Urantia, all available for free download. You can probably find a good deal of L. Ron Hubbard's work online also.

If you're more interested in how these books are published, download a familiar edition from gutenberg.org and open it up with ebook-edit or Sigil. Study the html + css. Find out how style sheets are linked to the text files. You might not run into many accented characters, but if you do, you'll see how they are worked in.
