....I still can't decide..... Currently, I'm leaning towards having a TUI, as that cuts down the image size by nearly half, which allows us to put ~430MB or so of images and other needed stuff on the disk... I'm not sure Windows users will survive without their mouse, though ......

Go with the text-based user interface, even Windows users can follow on-screen instructions and type in some basic commands.

Start with TUI interface (try using 'dialog') to get the live CD off the ground.
Rewriting to GUI (kdialog or even zenity) later should be pretty straightforward. |

One question: Would it be too tough to have a script that checks the computer HW to see if it can run the gui, failing which it can fall back to tui? Like gnome-fallback, cinnamon 2d and unity 2d ?
