VR's Veggie Wraps
Okay, I know a veggie wrap is trivial and hardly worth noting. But I have loved them so much that I gotta mention my personal favorite here: Asparagus Mushrooms Pine nuts Tomato Kalamata olives Feta cheese Hummus Six or eight wraps Briefly cook some asparagus and mushroom pieces in a little olive oil and throw in some pine nuts towards the end. Combine with tomatoes, olives, and a little feta cheese. Slather a spoonful or two of hummus on each wrap and then fill with the mixture and wrap it up. Eat one warm. When the rest have cooled, put them in plastic bags and refrigerate for lunches for the whole week. Eat them cold, room temperature, or warmed in a microwave. Make some for your friends and neighbours and at least one or two for me. Obviously, fresh veggies are best and I prefer a whole grain wrap. Most of the calories are in the wrap, hummus, feta, and oil and total about 300 or so kcal for a wrap that's almost as big as me. Where the heck were wraps when I was a kid? I don't think I even saw one before about the 1980's or early 1990's. Best thing since the sandwich. |
