VR's Veggie Wraps

Okay, I know a veggie wrap is trivial and hardly worth noting. But I have loved them so much that I gotta mention my personal favorite here:

Asparagus
Mushrooms
Pine nuts
Tomato
Kalamata olives
Feta cheese
Hummus
Six or eight wraps

Briefly cook some asparagus and mushroom pieces in a little olive oil and throw in some pine nuts towards the end. Combine with tomatoes, olives, and a little feta cheese. Slather a spoonful or two of hummus on each wrap and then fill with the mixture and wrap it up. Eat one warm. When the rest have cooled, put them in plastic bags and refrigerate for lunches for the whole week. Eat them cold, room temperature, or warmed in a microwave. Make some for your friends and neighbours and at least one or two for me.

Obviously, fresh veggies are best and I prefer a whole grain wrap. Most of the calories are in the wrap, hummus, feta, and oil and total about 300 or so kcal for a wrap that's almost as big as me.

Where the heck were wraps when I was a kid? I don't think I even saw one before about the 1980's or early 1990's. Best thing since the sandwich.

Elaborate on this please - how prepare it, how long to bake it at what temperature? Is it raw, unsweetened almond paste for example? Many recipes never state so. But it looks great. I love marzipan. The pine nuts addition is an unusual variety.

From allrecipes.com

Ingredients
1/2 pound almond paste
1 cup white sugar
2 egg whites
1/4 cup pine nuts

Directions
1.Use a pastry chopper (or food processor) to break up the almond paste into a granulated form. Put in mixing bowl and gradually add the sugar.
2.In another small bowl, beat the egg whites until stiff. Fold the egg whites into the sugar/almond paste mixture gently.
3.On a greased and floured cookie sheet, drop a spoonful of the mixture. Press pine nuts into the top of the cookie (you want to cover the top with nuts).
4.Bake at 325 degrees F (170 degrees C) for 10-12 minutes. Cool on wire rack.


And yes, it is good.

Unfortunatly whatever I cook is also bad for you.
