I'm in the UK so no choice! I'd not buy white anyway...far too 'Apple' for me.... :-)

Have had the graphite for several days and have just ordered a white one to compare. Probably will keep the white.

For me, 2 problems with the graphite after long use of the K2 white:

First: I find the dark graphite border, very dark and crisp fonts on a slightly grey background, in a black leather case, to be downright depressing and funereal to look at. I do not look forward to opening the case to view all that darkness.
Second: I get eye strain from the contrast. It seems true that the graphite border does actually accentuate the apparent contrast, makes the fonts look darker and the screen more pearly. But, at least in my case, the contrast is too stark, too busy, too "bright". I am hoping that the white border will, as some have said, make the background appear a little darker and the fonts a little darker (or softer) as well. Right now, after reading for a long period on the graphite K3, I find myself reaching for my old K2 because of its softer tones, much easier on the eyes, though obviously not as easy to read in dim light as the K3. For that I have lamps.
If the white doesn't work, I'll probably return both. To me, the modest improvements of the K3 aren't worth the eyestrain.

I wish the K3 would provide an another optional font style that is not as bold as the current two options. Some of the fonts provided in Topaz versions of Amazon books are far easier on the eyes; the Topaz format uses its own fonts rather the the native Kindle fonts.

I didn't have the option to buy the White one in my country, but would have still ordered the graphite even if I did.

I prefer graphite to white. I think, however careful one is; the white will show dirt. Also the graphite looks more classy than white.
