LOTR Trilogy - Tolkien
Interview with the Vampire - Anne Rice (enjoyed the movie more than the book)
A Time to Kill - John Grisham
It - Stephen King
Harry Potter - JK Rowling
The Other Boleyn Girl - Philippa Gregory
A Game of Thrones (HBO series) - George R. R. Martin

I'm sure there are more, I just haven't thought of them yet

I must plug the BBC's production of I, Claudius, an adaptation of the Robert Graves novels. It's notable for strong performances, including a turn by Patrick Stewart as Sejanus. The makeup dates it (what was up with British period productions in the 60s and 70s that troweled on the eye-makeup?), but otherwise it's fresh as paint.

L.A. Confidential. A totally brilliant adaptation of Ellroy's book.

The English Patient -- kudos to the late, great Minghella for a terrific adaptation.

About a Boy -- Perfectly captured the tone, and changed the ending away from Hornby's ending (which anchored the book [unnecessarily, IMHO] to a specific date/event).

I enjoyed the Bourne movies (especially the first), but they really have only a nodding acquaintance with the original novel.
