I've made them several times, and while they do taste good, they don't taste the same as Claussons. THAT is the flavor I'm craving, not just Kosher Dills. I can get Ferman's Kosher Dills over in Kobe ( about 60k from here) and they are pretty good too... but they aren't Claussons!

(When ever we travel to a country where I can buy them, I always pick up a jar to keep in the hotel room. )

I have the same problem with Jimmy Dean's Breakfast Sausage. I can make really good breakfast sausage, (breakfast sausage is about the easiest to make,) but it never tastes the SAME as Jimmy Dean's.

It's like when I was a kid and asked my mom to bring home Oreos, and she would show up with a bag of Hydrox or some other brand of the same sort of cookie. It's just not the same...

Oh, I see! That makes sense. Well, I'm not wedded to Claussen's although I enjoy them tremendously. There are only two brands of cold pack pickles that we get here, Claussen's and Nathan's. I buy whichever is on sale. My problem with making them is a little different. Chris cannot stand the smell of vinegar. So I'll have to make them on a day when A. he's at work and B. I can open all the windows and get the smell out of the house before he gets home. and C. I have the time. Finding this magical combination is probably going to be harder than making the pickles!

I love pickles, especially the big yellow onions.
I must not read this thread any further, as I'm in bed, can't sleep and am very hungry.

'Pickles' are such a diverse concept. As an American, when I think of pickles I think cucumber drowned in vinegar brine, sweet or sour, etc., or onions. Perhaps cauliflower and green beans, but again, in a vinegar brine. Always strong flavors.

The Koreans have their kimchee made from cabbages, daikon radish, cucumber, etc. but always with a spicy red pepper coating give strong flavors.

But Japanese eat an entirely different 'pickle.' Not at all strong flavor, but often with a strong smell. No vinegar at all. Just salt. Or instead of salt, the ground up powder from the husks of milled rice, with cabbage, eggplant, daikon, etc., buried in a wet mudpack of that stuff. Not at all what I would think of as 'pickle' but pretty damn tasty, and eaten with all meals. Makes for a nice side dish.

So very salivatingly awesome. We're having tuna (or salmon, or barramundi) tonight, but tomorrow it might be pho-day now.

I'm going to have to wait considerably longer than that - my grill died. So no smoking brisket for me until I get a new one.

It was a charcoal grill. I'm not sure what I'm replacing it with yet. We went looking at grills today but didn't make a decision. I found a charcoal grill I loved but it's considerably bigger than the old one was, which means it's going to use a lot more charcoal. So even though I prefer the charcoal taste, I may end up going with propane for cost efficiency. I can get a lot more than one meal's worth of cooking out of a tank of propane.
