Firstly, if the page size is set correctly, then there is no need to zoom in and out. Using OpenOffice Writer, I paste in text and format it in a fashion I like. When done, I then 'Export to PDF'. Other people may not like my particular choice of formatting, but they can amend the style to suit themselves. A variety of different fonts can be embedded if you want them. True, file sizes are large, but the memory on the Sony is quite adequate even without an SD card.

This is assuming you are starting from plain text, but I think 99% of the material I have on my reader started as plain text.

If you find the font or the font size isn't to your liking, you can always go back to the original Writer file and amend the style to suit.

Works for me.
I used to do this for my iLiad. The source files were quite messy HTML, and it was just very much easier to copy and paste into a word document and set page and font styles. Plus, PDF works natively really well on an iLiad. Also did it quite often for my Bebook. It was just so much easier than keep struggling with file formats and conversion, and I got the page setup exactly as I liked with the right size fonts, indents, margins, etc.

For LaTeX templates...

There's a "reader.sty" for setting the page size for the Sony in this thread here:
https://www.mobileread.com/forums/showthread.php?t=12872
based on this one for the Illiad:
https://www.mobileread.com/forums/showthread.php?t=7529

neither of those have anything to do with fonts though. The default Computer Modern is not very reader-friendly, I have to confess. I've used the kpfonts package for making ebooks with LaTeX, and it looks nice. Utopia from the mathdesign package might work out well; I've been thinking of trying it.
