Apparently Diana Gabaldon was asked about Martin's troubles and whether she will be able to keep up or not for the Outlander series and doesn't think it will be a problem:

I wonder if it's actually possible to plan a book series THAT far ahead and not mess it up. Now that I'm reading/watching Shannara again, I've realised that Brooks hasn't been writing trilogies for a long time. He has been writing 1200 page books, split up into three parts. I'm often wondering how some writers can write books at a pace of one every six months. Mostly, those are writing about one or two characters as main protagonists, and often in a shared world too.
It's probably easier because the characters, the backstory, and the entire world already exists. edit: That guy (Sanderson) can write more books and series at one time than I have time to read. If he really finishes Stormlight 5 in 2021, I might just be able to give the series a go... after the five hundred million books I wish to read, games I want to play, and music I want to listen to. I think I'm amusing myself to death. Too much to do that can't be done because I have to go to work every day, without which I can't even buy stuff to amuse myself with. I'm not sure I care any more. I'm having trouble working up enthusiasm for the HBO series too. I might have hit my limit, not sure. Starting to question "The Walking Dead", too.
