I'd give a huge thumbs up to The White Bone by Barbara Gowdy. It's written entirely from the perspectives of its main characters, all of whom are Elephants. It's a brilliant book!

Lovelock is another great book co-written by Orson Scott Card and Katherine Kidd. It's written in first person by a Capuchin Monkey.

A Rustle in the Grass by Robin Hawdon. It's a bit like Watership Down - animals portrayed as animals rather than as transmogrified humans. My teenaged self adored it.
Also, there's a sequel to Mrs Frisby called Racso and the Rats of Nimh, albeit by a different author. |

R. K. Narayan's novel A Tiger for Malgudi (1983) is narrated by a tiger. Raja the tiger, now old and toothless, looks back on his life in the circus and in films.
