Right click the book in the Calibre library and select "Edit Book". Once the book opens in the editor, open the stylesheet and delete all the "color" entries from the styles. Then re-save the book and you're done.

If the color is not referenced in a stylesheet, is it best to find the color numbers defined and use search and replace to change the numbers to black.

It's better to delete colour references entirely. Hard-coded colours, generally speaking, are a Bad Thing.

I've had that happen in a couple of books. Now I know how to fix it!
One book was just the chapter title. Another was the whole book.

It's a free book at the moment.

Besides faint text, it has some formatting issue. Probably a rushed conversion from pdf to kindle format, leaving page numbers within the text.
That, and a lot of publishers seem to use the same CSS for print and eBook versions. They forget, or don't know, that eBooks are best delivered with as little hardcoded formatting as possible. Print books are of course the opposite wherein they require a lot of hardcoded formatting.
