Green tea is ALWAYS resteeped, even before serving the first cup, in better tea houses in Japan. The first steeping (is that a word?) is thrown away! They will add fresh hot water 4-5 times to green teas, and even prefer tiny little tea pots just because of this practice.


I think this is one of the reasons I don't like green tea!

Earl Grey's citrusy rather than floral - the taste comes from bergamot oil, which is extracted from the rind of bergamots (the citrus fruit, not the garden flower!)

I used to really like Earl Grey. These days, I still like the smell (I adore bergamot), but not the taste.

I like the smell too, but I really don't like anything added to the flavor or smell of teas. I use a lot of vanilla oil in the house as incense, and lots of peppermint too, but don't care for either in teas. I could never understand the use of lemon in tea. Or milk, for that matter. I realize I'm in a minority about this, but I guess there is no accounting for taste.

For your next experiment (Stitchawl, cover your eyes - this is the only flavoured tea I like these days!) you want a strong black loose leaf tea, milk (whole is nicest, but any works), water, half a stick of cinnamon, a cardamon pod or two, a clove, a couple of black pepper corns, some ginger, and sugar to taste.

To make two cups/mugs:
Put one cup/mug of water and the same amount of milk into a pan
Bring to the boil
Add all the ingredients except the sugar and boil for about 5 minutes or so
Add sugar to taste
Strain and serve

I can't stand lemon in tea, although I do take milk - usually skimmed, which doesn't make that much difference to the taste, so I don't know why I bother!

The only flavoured tea I like is homemade masala chai - it's soothing, warming and invigorating.

Now that does sound good. I believe I'd like that. Does it require sugar? I generally don't like sweet hot drinks for some reason, although I do like my iced tea sweetened.
