I don't care for lima beans so I leave them out, substituting kidney, navy, black, or what ever is around at the time. I also often add shrimp, cut up sausage, left-over meats, etc.... a good clean-up-the-fridge dish.

Around our house, succotash is butter beans and corn. And unlike Stitch, I love butter beans.

Sounds good. And Wheat free! . Just bought some pork chops, so I'll give it a go - just have to go out and buy some corn. And zucchini (or courgette as we know it). Don't know what lima beans are, but I do have kidney beans.

If lima beans are the same as butter beans, them I'm with Stitchawl. Ever since being forced to eat them with school dinners, I have disliked them a lot.

What I have actually being doing right now is removing a dead pigeon from the top of our conservatory roof. There's a smudge on one of our bedroom windows, so I guess it flew into it, broke its neck and fell onto the conservatory. Bluebottles and maggots abounded, and the smell was rank. Not a fun task.

That's what did it for me, except it was eating them out of ration cans in Vietnam... Ham and Lima Beans... or as we called 'em back then; 'Ham and Mothas!' Easily one of the most revolting dishes ever created. One of the few that could not even be made palatable with enough Tabasco sauce!

So what are you doing RIGHT NOW?

I don't remember the Ham and Lima Beans, but I do recall that everyone except me hated the Ham and Eggs. As for all the rest, they all tasted more or less like chicken. Then again, what we were getting into in the 185th Medical Dispensary at Phu Loi may have been different from what the folks in the field were being issued. At least we had a mess hall, making the rations an option.

Try them again, Stitch, and you too, orlok. I never ate liver until I went in the Army, and found I despised it with a passion. Then one day my wife and I were at a cafeteria and I decided to try a bit of the liver. I loved it (still do). From that day forward I've wondered what in blazes was that stuff that passed for liver in my Army days.

I'm definitely going to give succotash a try, possibly tomorrow when I take a walk to our local supermarket. If I can find lima beans, then I'll add them, otherwise butterbeans are definitely available. You may be right Tom, I have certainly changed my mind on certain foods I disliked in my childhood. Avocado being one such item, which once made me throw up when my mother told me the dessert I had just had was made from avocado. Now I can't get enough of them .

I'll give 'em a try, but...
There's no doubt that 'fresh' veggies taste a lot better than canned stuff, and I have discovered many foods that I refused in my earlier years to actually be pretty tasty. As a kid I wouldn't eat any other veggies than potatoes, tomatoes, or corn. I ate a very American style 3/4 meat-1/8 veg-1/8 bread as my typical diet. My mother insisted on 'canned' peas and carrots with almost every meal. Vile combination! (The person that came up with the idea for canned peas and carrots should be drawn and quartered!) Actually, she only used 'canned' veggies, never fresh or frozen. It wasn't until I was on my own that I discovered that frozen vegetables were actually OK, and that fresh ones could even taste good! When I moved to Asia, and the convenience of fresh veggies, my diet changed to 3/4 vegetable, 1/8 meat (chicken, fish, poultry,) 1/8 rice. I won't claim to be any healthier, but food sure tastes better.

These days we nearly always buy frozen vegetables, and, like you, are striving to get more vegetables and less meat in our diet. I'm the only real fish lover in the house, though.

Waiting for noon, the Mediamarkt opens at that time and I want to go look at cameras. At the moment I'm liking the Sony Cybershot HX400. It's a "compact" camera but it's got all the features I want. I was thinking of a DSLR or one of those new smaller cameras with changeable lenses but I realised that I don't carry around extra lenses.

I'm also wondering if I can be bothered to put on proper pants or if it's okay to go wearing my very comfy sweatpants .

I'll weigh in to say around here succotash is just mixed corn and butterbeans (lima beans.) Bonus points if you just stir them together on your actual plate and announce, "Hey, look, I'm eating succotash!" (Yes, I did that recently, lol.)

Hear! Hear! Other ingredients can be added (I've seen store brands with tomatos labled "Triple Succotash") but succotash in my part of the world is just corn and butterbeans.
